An encapsulated prototype of the aqueous extracts was then administered to mice for 14 days. Results showed that the concentration of indole-3-carbinol (I3C), a key molecule in the digestion process, was significantly higher in the nanoencapsulated extract than in the free extract. Moreover, the encapsulated version also had higher I3C retention than the crude extract.
The red cabbage aqueous extract was then fed to descending and ascending colon reactors. Two-way ANOVA was performed to determine the statistical significance of the differences between the descending and ascending colonies. Statistically significant differences were identified between both colonies, which indicated a 2-fold decrease in the descending and a 1.5-fold increase in the ascending colonies after 14 days of treatment.
The results of the study suggest that the use of encapsulated prototypes of aqueous extracts can help improve the bioavailability and stability of glucosinolates. Furthermore, the plasma membrane vesicles of the aqueous extracts were found to have high retention of sulforaphane and indol-3-carbinol. This may indicate that the vesicles act as feeding agents for the enzymes in the body.
This study suggests that the red cabbage aqueous extract can be successfully used in a variety of applications, including obesity management. In addition, the aqueous extract can be used in the development of a functional food product that can be incorporated into a diet.
